With school back in session, mornings can get pretty hectic. Whether you’re sending off kids to school yourself, looking to help to ease your family’s morning rush by prepping lunches for the week, or just wanting to enjoy a simple lunch option yourself – these spinach and turkey tortilla roll-ups are a perfect solution. They’re quick to prepare, nutritious, and a great way to keep things simple and healthy on those busy school day mornings.

 

Spinach and Turkey Tortilla Roll-ups Recipe

Ingredients:

  • 2 10-inch whole grain tortillas (150g)
  • ¼ cup cream cheese softened (70g)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ⅛ teaspoon black pepper
  • 1 cup cheddar cheese shredded (60g)
  • 2 medium carrots grated (115g)
  • 2 tablespoon plain yogurt (40g)
  • 6 slices of deli turkey meat (106g)
  • ½ cup spinach (20g)

Instructions:

  1. In a bowl, mix together the cream cheese, garlic powder, onion powder, black pepper, cheddar cheese, grated carrots, and yogurt until you get a smooth spread.
  2. Spread half of the cream cheese mixture onto each tortilla, leaving the edges clear.
  3. Add a layer of spinach and three slices of deli turkey on top.
  4. Roll up each tortilla tightly and cut into 6 slices.

Note: For best results, tightly wrap each rolled tortilla in plastic wrap and allow it to chill in the fridge for at least 1 hour before cutting and serving (this helps the cream cheese harden and keeps the roll ups together). However, this step is optional if you would prefer to eat right away.
